WHITE RICE WITH Braised Chicken with pepper IS THE BEST
Braised chicken with ginger, chicken with turmeric, chicken with lemongrass... three familiar chicken dishes in our meals. In my house, these three storage methods are almost the same. Just note one thing, if you want to store chicken in any style, that spice must have a higher ratio than other spices such as ginger, lemongrass or turmeric.
🌿 How to store my house below:

  • 2 chicken thighs about 800g
    1 fresh ginger root (about 150g)
    1 teaspoon minced lemongrass
    1 teaspoon minced garlic
    1 teaspoon minced shallot & 1 minced chili
    1/4 teaspoon turmeric powder (or 1 teaspoon fresh turmeric)
    1 teaspoon salt
    1 teaspoon fish sauce
    1 teaspoon sugar
    1/2 teaspoon MSG
    1/2 teaspoon seasoning seeds
    little crushed pepper
    1 fresh coconut (this step is the Southern standard haha ​​😂... every time you stock up on fish, you must have some coconut water for the dish to be rich, but the suffering is being separated so you can't buy coconut)
    Chicken after cleaning, cut into pieces and marinated with spices: minced garlic, minced shallot, crushed & minced ginger (remember to leave some for garnish and all other spices according to the ratio above. Marinate for about 15 minutes.
    Use a small pot to make some caramel. When the caramel has just turned to the color of cockroach wings, add the chicken and stir-fry again and turn off the heat. Continue to marinate the mixture for about 20 minutes
    Add coconut water and just cover the chicken, cook on medium heat, then switch to low heat for the chicken to absorb the spices evenly (If you don't have coconut water, I use filtered water, then add a little more sugar). Also in this step add some crushed, sliced ​​ginger and a little purple onion to make the dish more attractive. Remember to skim soup to make the dish more delicious.
    Cook for about 15-20 minutes, you can have lunch with some raw vegetables and then add another bowl of soup to eat a lot of rice.
