Last evening's meatfree supper was a simple stir fry. It's been a while. I had toyed with the idea of making wraps, but I was on a roll with something in the office. It had been well, just Monday, if you know what I mean. Today, I have catch up to do.
Anyway, that meant that when I got to the kitchen, I was very happy to chop. And slice. And chop. And grate.
For added flavour, juice of one lemon, 2 tsp fish sauce (substitute with vegan salty equivalent) 1 date, 2 cloves garlic, 0.5 tsp of my chilli jam and 2 tsp freshly grated ginger, and 1 star anise, hammered together in a pestle and mortar. Finally half a bunch of fresh coriander, chopped, to end.
Served with fragrant rice.
The Husband's helping was twice that. Twice. ðŸ¤
