Nothing as sweet as Honey; no wonder it's also what many call their sweethearts not so!

Of course we all know where Honey comes from; those busy bees who perform the vital task of pollinating crops and produce the sweetest honey from the nectar of flowers.

They store honey in their Hives in wax structures called honeycomb, to provide food during winter when there are less flowering plants making it difficult to forage for food.

We all know that Honey is full of nutrients and has many healing properties, but today I'm using it to make a special Honey & Orange Saucy Cake; nothing to do with health here, this is a special teatime treat, and I'll show you how to make one yourself.

Honey & Orange Saucy Cake

Cream together:

  • 125 g Butter at room temperature
  • 200 ml Sugar

Add & continue beating:

  • 2 Eggs

Add alternatively:

  • 375 ml Self-Raising Flour
  • 125 ml Orange Juice

Spoon into buttered spring-form cake pan
Bake at 180°C for approx 35 min

Sauce
Melt together & pour over hot cake:

  • 125 g Butter
  • 125 ml Honey
  • Grated rind of half an Orange

This cake is best eaten while still lukewarm, but remove carefully from pan, as the honeyed drenched sponge cake needs careful handling; just like some of us women!
