Prawn & Chicken Fried Rice ~ Qurator's: Hive Top Chef! | Fried Rice

Hello Hiveans! I am so happy to learn that Fried Rice is the theme for this week's Qurator's Top Chef Contest. I have started working full time in office and hence my time is so less to do other things during weekdays. But of course I still cannot miss my favorite cooking contest especially with my favorite cooking recipe. So here is my take on Prawn and Chicken Fried Rice for this week's entry.

Prawn & Chicken Fried Rice is definitely a type of fried rice for prawn and chicken lovers. For this recipe, I used chicken cubes and sesame oil as a flavor enhancer as the flavor comes from the prawn and the chicken. I do not want to use chili sauce or soy sauce that would affect the natural colors from that mix vegetables that created the attractive color of this fried rice.

Never use freshly cooked rice that is still hot as its stickiness will make your fried rice soggy. In the Malay cooking world, we always make sure that the fried rice must be cold that sometimes we would prefer to cook it night time and let it cool overnight, so that we can fry the rice in the morning for breakfast. Some people they are so fussy about eating a sticky or soggy fried rice that is considered as a failed fried rice. I am not sure elsewhere in the world how you would prefer your fried rice, may be different from here.

Another tips is the amount of oil, use just enough. You have to see how much oil to use depending on the quantity of rice. Too much oil and your rice will become too oily but too little and your rice will stick to the pan. As I am using a lot of eggs, I also have to consider that the eggs absorb a lot of oil when fried. The taste of fried rice will also be unpleasant and less attractive if the rice is lumpy. Okay, so let's start cooking!

Prawn & Chicken Fried Rice

Ingredients

  • 2 bowls of white rice
  • 5 eggs
  • chicken breast, diced
  • shrimps
  • vegetables (carrots, peas, cabbage)
  • white pepper
  • 2 chicken stock cubes
  • 1/2 teaspoon sesame oil
  • 6 cloves of garlic
  • 2 onions
  • scallions

Garnishing items

  • fried onions
  • chili slices
  • cucumber

METHODS

  1. Prepare and cut all ingredients.

  2. Heat the oil and fry half of the onion until brown and remove.

  3. Using the same oil, fry onion and garlic. Saute until fragrant.

  4. Add the chicken and stir until slightly cooked and also add the shrimp, just stir for awhile until the prawn is red, remove from pan.

  5. Using the same oil, add the chicken stock cubes and mix well.

  6. Add the eggs. Stir the eggs a little so that they are like scrambled eggs, no need to be too fine. Let the eggs clump together.

  7. Add white rice and sesame oil then stir until the rice is well blended.

  8. Add all vegetables and mix well.

  9. I add my favorite green chilies as I like the extra spiciness.

  10. Add chicken and mix well. Leave to fry for 10 minutes.

  11. Add scallions and mix well.

  12. Finally add the prawn and fried onions. Season with salt and pepper to taste.
