¡Paisanos venezolanos! Hago a ustedes un llamado de atención, ¿No les parece que nuestras deliciosas Caraotas Negras, merecen que se les dedique un día como homenaje, se imaginan?… “El Día de las Caraotas Negras”. ¡Sería genial! Ojo, no estoy segura de su existencia. De ser así, sáquenme de esta duda por favor.
Sustentando las razones por las cuales sería excelente un homenaje a tan deliciosos granos, paso a contarles algo de historia y datos en cuanto a costumbre y tradición en Venezuela.

En el año 1539, un italiano emprendedor, Galeoto Cei, llegó a Sudamérica a probar suerte con el negocio de ganadería. En Venezuela compartió momentos con los indígenas y aprendió muchas de nuestras costumbres y en lo que a gastronomía se refería mucho más, ya que debía comer a lo venezolano. En esa oportunidad, probó las caraotas “carabotas" así las llamó y de hecho así está escrito en su libro “Viaggio e relazione delle Indie” (1539-1553) escrito en el siglo XVI.
Galeoto Cei comentaba, que los indios sembraban granos de varios colores; negros morados, verdes, grises, rojos etc. Era lo que comían para ese entonces. Como anécdota, decía que le caían muy pesadas inflamando su estómago, lo que le ocasionaba “flatulencias”. Los imagino corriendo para aislarse de los demás colonizadores por esas “ventosidades”. Hoy en día para que eso no suceda, se le coloca una cucharadita de bicarbonato al agua de las caraotas antes de cocinarlas, también funciona para que se ablanden más rápido.

Sólo voy a reseñar a uno de nuestros íconos en la cocina caraqueña, Don Armando Scannone, en “El libro Rojo” “Mi Cocina” (1982) Allí indica que entre los ingredientes para preparar ¾ tazas de la “Sopa de Caraotas Negras”, se debe cocinar por 60 minutos con la cebolla y el pimentón picado. Luego se retiran estos ingredientes y se le agrega 350 gramos de papelón, sal, pimienta y más agua. Él recomienda acompañar esta “sopa” con arroz blanco, y afirma que se puede conservar en la nevera por una semana.(p.83)

Ante la anterior recomendación culinaria de nuestro respetado y admirado Scannonne, en Venezuela se acostumbra variar la preparación , ingredientes y tiempo de cocción. Un ejemplo es que en mi caso, no sé si coincido con otros comensales, pero yo, las pongo en remojo la noche anterior, luego las lavo y coloco en una olla con agua hirviendo previamente. Sólo les agrego una pizca de bicarbonato por dos razones: una para que el proceso de ablandado sea más rápido, y la otra para evitar las tan famosas flatulencias. Al estar blanditas, o notar que los granos revientan, están listas para agregarles un aliño frito que consta de ajo y cebolla, luego la sal y una cucharadita de comino molido. Las dejo unos 20 minutos más para que se pongan espesas, y al apagarlas le agrego una ramita de cilantro. Seguidamente las dejo tapadas unos diez minutos antes de servir, para que adquieran ese olor característico de la yerba. No les pongo ningún tipo de dulzor, puesto que eso depende de los gustos y costumbres, en cada familia o región.

Phaseolus vulgaris
Es una planta de hábito de crecimiento indeterminado, porte erecto y una guía corta al fin del tallo principal. Es bastante ramificada, y tiende a agrupar la mayor cantidad de frutos en el eje principal.

Fruto: Las semillas son negras opacas, alargadas, de tamaño pequeño, con 18 a 25 g/100 semillas.
Ciclo
Florece a los 35 días después de germinar.
Tipo de suelos
los más indicados son los suelos ligeros, de textura silíceo-limosa, con buen drenaje y ricos en materia orgánica
Beneficios
Tiene un alto contenido en magnesio y es una buena fuente de potasio, hierro, calcio, zinc y fósforo.13

Luego de este corto pero sustancioso paseo como parte de la tradición venezolana desde tiempos remotos, hago hincapié ante mi llamado de atención.
_Paisanos y amigos de todo el mundo...,
Considerando:

  • Que las caraotas negras son un delicioso plato típico Nacional .
  • Que son granos de características nutritivas, pues contienen vitaminas y minerales.
  • Que son deliciosas bien sean salados, o con un poco de dulzor
  • Que ya forman parte de la internacionalidad.
  • Que además de ser granos de variados colores, su cultivo es sencillo.
  • Que son de fácil preparación.
  • Que son exquisitamente deliciosas, etc.
    _Sugiero:
    Establecer "El Día Nacional de Las Caraotas Negras", convirtiéndose en fecha de Júbilo para nosotros los venezolanos. Reiterando que de ya existir dicho homenaje, igualmente les comunico mi complacencia al solicitarlo.
    Es justicia, a los 03 días del mes de septiembre de 2021.
