Ingredients

250 g flour g.o.x.
125 g cold butter
60 grams of sugar
1 pinch of salt
1 vanilla or vanilla extract
zest of half a lemon
1 large egg (65-70 g)
1 large egg yolk
a little butter for the mold
500 g of strawberry jam or jam of your choice

Preparation

For the dough
Put the flour, sugar, salt in the bowl of the mixer with the cutters and mix them.
Add the cold butter cut into small pieces and with intermittent movement let the mixture become like wet sand.
In a bowl, beat the egg, yolk, lemon zest and vanilla with a fork.
With the mixer running, pour the egg mixture into the solid ingredients.
Once combined in dough, stop the mixer. Combine the ingredients into a dough by hand.
Press the dough between the palms to become flat, wrap it with cling film and put it in the fridge for at least 30 minutes to tighten and freeze.
Preheat their oven to 170ºC in air. We will bake on the penultimate grill on top.

We set the flora paste
Remove the cold dough from the fridge.
Keep 1/4 of the dough to garnish the flora paste.
Put the rest of the dough between two non-stick papers.
With a thick rolling pin, open a thin sheet.
Put the sheet in the buttered form.
Spread the sides of the dough.
Pour in the jam.
With the rest of the dough, open a sheet and make strings to cover the flora paste, or with a cookie cutter, cut cookies and place them on its surface.
Put in the hot oven and bake for about 25 minutes until the flora paste turns brown and the dough becomes like a cookie.
Let stand in the form and cool and stabilize the jam.
